MASHED BEANS WITH YAM RECIPE (EWA AGOYIN).

INGREDIENTS

Mashed beans ingredient

  • 2 cups red beans
  • Salt
Stew ingredient
  • 1 large white onion (thinly slices)
  • 1 cup palm oil
  • Seasoning cubecube
  • 1 large bell pepper (tatashe)
  • 4 habanero peppers (Ata Rodo)
  • Dried hot pepper (ata gbigbe) 
  • 1 medium onion
  • 1 tsp salt
  • Fried meat 
  • Boiled egg
Yam ingredient
  • White puna yam 
  • Salt(optional) 

PROCEDURES

Yam procedures

  • Cut the yam tuber into 1 inch slices.
  • Peel and cut the slices into half moons (rectangular shape). 
  • Wash the slices, place in a pot and pour water to cover the contents.
  • Boil till the yam is soft. This is when you can easily drive a fork into the slices without resistance.
  • Add salt and leave to cook for about 2 minutes. This is so that the salt will seep into the yam slices.
  • Turn off the heat and drain the water. 

Mashed beans procedure

  • Add 6 cups of water to a pot, set on low heat. 
  • Wash and add the beans
  • Parboil  the beans for 30min, Drain the water and add fresh water again. 
  •  We put back our pot and leave on low heat for 2hr till our beans is very soft. 
  • Add salt to taste.

Stew procedure

  • In a blender, we combine the bell pepper, dried pepper, habanero(rodo) pepper and the half medium onion for blending
  • Set a medium sized pot on low heat, add the palm oil
  • We bleach the oil for about 10-15mins
  • Turn the heat to minimum, add the diced onion, stir at interval(till dark brown). 
  • Add the blended pepper, into a pot with low heat to reduces the moisture in the pepper.
  • Having removed the moisture, we can now add the pepper bit by bit to the fried onions.
  • Taste is very important,  so we add our salt and our seasoning cube to cook for 5 minutes. 
  • We can finally add our fried meat and boiled egg to cook for another 7 minute. (This is to ensure the stew enters both the meat and egg. 

Serving procedure

  • We can enjoy our meal, by serving our boiled yam, mashed beans and stew. (In case you dont like yam, mashed beans goes well with bread and boiled potatoes).
